Canada de la Virgen: Regenerative Ranching Practices

Regenerative agriculture is a global movement, but at Cañada de la Virgen, it’s been a way of life for over 25 years. This 17th-century ranch, set in Central Mexico’s arid terrain, is a model of sustainability, blending tradition and innovation to restore the health of its land, livestock, and community.


Restoring the Land with Agave

One of the ranch’s most transformative efforts is its agave reforestation program. Over 60,000 native agave plants have been cultivated, a key step in reversing desertification and addressing water scarcity. Using a system called Agavesse, agaves are planted along keyline berms that harvest rainwater and enrich the soil. This symbiotic relationship between agave, water, and soil microorganisms has revitalized degraded land with minimal water use, creating healthier soil and natural reforestation.


Agave also plays a critical role in sustaining our cattle through harsh, dry winters. We harvest, grind, and ferment the leaves into silage, a nutritious and low-cost feed. Mixed with powdered mesquite, it ensures our cows remain healthy without relying on GMO corn or soy products. This approach supports both the environment and the ranch’s organic certification.


Mata de Monte: A Regenerative Agave Spirit

Mexico’s agave is sacred, and Mata de Monte, our regenerative agave destilado, is no exception. Made with steamed salmiana agave piñas, it offers a clean, citrusy flavor that’s redefining agave spirits.


With a lower alcohol content of 29%, it’s light, refreshing, and sustainably produced. Widely available around San Miguel de Allende, it reflects our commitment to tradition, sustainability, and quality.

The ranch operates with a circular approach to farming, ensuring every process contributes to the health of the land and animals.
